Grease does not block a line the way a solid obstruction does. Fats, oils and grease go down the drain warm and liquid, cool as they travel, and deposit on the pipe wall. The layer thickens and hardens until the bore is a fraction of its diameter and the line surcharges under normal load. By the time a kitchen notices, the deposit is typically a rigid shell several inches thick that a cable will simply bore a tunnel through.
California carries more of this work per head than most states, for the straightforward reason that it has an enormous food-service sector. In the restaurant-dense districts of San Francisco, downtown Los Angeles, San Jose, Santa Ana, Anaheim and the Orange County coastal cities, commercial laterals run under a continuous fat and oil load. Apartment buildings and condominium blocks accumulate it too, slowly, from dozens of domestic kitchens into one shared lateral, and those lines often go decades without anyone thinking about them until the ground floor backs up.
Hot water at volume is what shifts hardened grease. We run the jetter with heated water and a nozzle chosen for volume rather than pure pressure, which softens the deposit and carries it away rather than chipping at it. Where the layer is heavy we work in passes. Cold-water jetting will move some of it. Cables do almost nothing useful against grease, and anyone clearing a commercial kitchen line with a cable is coming back.
Most California jurisdictions run a fats, oils and grease programme requiring food-service establishments to maintain grease interceptors and to keep service records available for inspection. We service the line and the interceptor together and leave you documentation of the work, because the inspection usually asks for evidence of a maintenance interval rather than evidence of a single clean. If your line is surcharging repeatedly, the interceptor is very often the real story and the lateral is just where it shows.
Technician insight
The pattern in commercial grease work is that the lateral gets blamed and the interceptor is the problem. We have jetted restaurant lines in Orange County every three months for operators who were convinced they had a bad pipe, when the real issue was an interceptor sized for the kitchen the premises had fifteen years ago. Upsizing it cost less than two years of quarterly jetting. Any contractor servicing your line who never looks at your interceptor is selling you a subscription.

How it works
- 1
Survey the line
Camera first, to see how far the bore has closed and whether there is anything structural behind the grease. Heavy deposits sometimes hide an offset or a belly that is helping them accumulate.
- 2
Heat and volume
Hot water at volume softens the deposit so it releases from the wall and travels, rather than being chipped off in fragments that reblock downstream.
- 3
Check the interceptor
A line that greases up fast usually has an interceptor that is undersized, overdue or bypassed. Cleaning the lateral without addressing that is a repeat visit by appointment.
- 4
Document it
You get a dated service record and a recommended interval. That record is what a FOG inspection asks for.
Pricing
Priced per visit on line length and load, with maintenance contracts at a lower per-visit rate.
